In 1971, a restaurant called The Hungry Monk in Jevington, England, put a pie on its menu that owner Nigel Mackenzie and chef Ian Dowding had been developing: sliced banana, whipped cream, and a toffee made by slow-boiling a tin of condensed milk for hours until it turned deep and caramelised, all piled onto a biscuit base. 

They called it banoffee, a mash-up of banana and toffee, and it caught on fast enough that the word landed in the Oxford English Dictionary by 1997.

The cake version came later, once bakeries began translating the same combination, toffee for richness, banana for freshness, cream to keep it from getting heavy, into a layered sponge instead of a pastry shell.
